Watermelon and feta salad is all about the interplay of flavors and textures. The saltiness of the feta against the sweetness of the watermelon and the mint. This salad is quick and simple to put together but the quality of the ingredients is crucial for your success, use creamy but not salty feta, fresh and not overripe watermelon and the best mint and balsamic vinegar you can get.
1 small watermelon 500g Feta cheese 30 mint leaves freshly ground black pepper 1 cup balsamic vinegar 1 tsp honey
Cut 1/2 inch tick star shaped slices of watermelon by using a large star cookie cutter.
Make the balsamic reduction by simmering the balsamic vinegar in a nonstick sauce pan over low fire for 15-20 minutes. When almost ready add the honey and whisk until the reduction is thick put pourable, similar to melted chocolate.
Assemble: Place 5 mint leaves over a square slice of feta in each salad dish, put the watermelon star on top. Sprinkle with freshly ground black pepper and drizzle with the balsamic reduction.
Make ahead: Several hours before dinner, wash the mint, wrap in towel paper and chill. Cut the watermelon stars, put them in a tupperware and chill. Make the balsamic reduction and keep it at room temperature. Slice the feta and place in the salad plates. Assemble the salad right before serving.
