Mint Sauce

This multipurpose mint sauce is a great companion to chicken, fish or lamb dishes. It takes seconds to make and it will enhance the flavors of those more delicate cuts such as chicken or turkey breast and white fish.

Yields about 2/3 cup

1 cup mint leaves
1/2 cup parsley
1 Tbs of fresh thyme
2 garlic cloves, crushed
1/3 cup canola oil (or olive oil)
2 Tsp Dijon mustard
1/4 tsp black pepper
pinch of red pepper flakes.

Combine all the ingredients except for the oil in the bowl of a food processor. Start the machine and slowly add the oil trough the feeding tube. Process until smooth, if the dance is too tick add a splash of water of oil, making sure not to overdilute it.
Taste and adjust the seasoning.

Serve with roasted Cornish Hens, lamb chops or seared tuna.
